fictional text conversation between moms about meal ideas

Allie - cilantro lime chicken tacos

Definitely not the most intricate recipe but great for those days with evening activities or when you don’t feel like cooking. This recipe is simple and involves a crockpot, perfect for summertime.

Recipe for Cilantro Lime Chicken Tacos - great for young families or a new mom meal
"I have taken this as a meal to many new moms when baby arrives! These leftovers freeze well too. So many options!" – Allie

Kayla - energy balls

"A filling and delicious snack! I keep them in the fridge constantly because everyone loves them. My brother in law just visited and one of the first things he said was "Do you have any of those energy balls?"

-1 cup peanut butter

-1 cup oats (old fashioned or quick oats)

-1/4 cup honey

-1/2 cup milled flaxseed

-1 tsp vanilla

-1/3 cup chocolate chips

  1. Mix all ingredients together and roll into balls.

  2. Place on a sheet pan lined with parchment paper and refrigerate until hardened.

  3. Enjoy!

Sarah - breakfast for dinner

"Our go to dinner when we are busy and low on groceries is breakfast for dinner: scrambled eggs, bacon and fruit!!! Everyone eats it (even the baby), safe for our lactose intolerant girl and lots of protein to keep everyone full!!

Lindsey - baked macaroni and cheese

"Growing up, I was a picky eater. Karma has come back to bite me in motherhood. My oldest is the pickiest eater I have ever encountered. His diet consists of fruit, pb&j, grilled cheese, various snacks, and mac & cheese. He adamantly refuses to try new things. Even he will (sometimes) eat this macaroni and cheese, despite it not being made from a box.

I grew up with 3 siblings, all of us 2 years apart in age. How my SAH mother did it is still a mystery to me. This recipe is a simple one, and she would often make this macaroni and cheese on night when we were eating in shifts due to activities, or at the end of a long week. She would couple it with a fruit or vegetable and some frozen fish sticks or chicken nuggets. I will often fix it to bring as a side dish to a pot luck, because it guarantees that my picky children will have something to eat."

"To me it tastes like nostalgia and I hope others will enjoy this cheesy comfort food." – Lindsey

anna - chicken pesto pasta

✨Everyone in the fam loves it

✨I always have ingredients on hand bc it’s SO easy and yum

✨Can all be found at Costco so it’s easy to keep on hand because it all comes in bulk.

  1. Boil the pasta.

  2. While it cooks, put a spoonful (or two or three) sundried tomatoes in pan. Measure with your ❤️

  3. After cooking that a few minutes, throw a bag of Soules Flame Grilled chicken in with it until it all gets warm and cooked through (can blot out the excess oil from the sundried tomatoes with a paper towel if necessary at the end)

  4. Drain cooked pasta and put into chicken pan.

  5. Put a couple spoonfuls of pesto in and mix together. Measure with your ❤️.

  6. ✨Ready to serve✨

racie - Tomato sandwich on sourdough

"OK, I’m not really sure I can even call this cooking, but it is something that we eat a lot during the summer because it’s easy to put together after a long day at the pool."

-Sourdough bread (homemade is my fav)

-Heirloom tomatoes

-Mayonnaise

-Sea salt

-Pepper

  1. Toast bread, slice tomatoes and season with course sea salt and pepper,

  2. Assemble and enjoy!

Additions to make it fancy:

Bacon

Pesto

Aioli

Arugula

Yum
